If you like Italian Bresaola then you are likely to enjoy our Dorset Air-Dried Beef, which is made using the finest quality beef from West Country grass fed cattle. We have cured finely trimmed beef and then dried it until the texture is firm but supple and the colour is a deep rich red with a flavour to match. Try serving this with a drizzle of a fine extra virgin olive oil, squeeze of fresh lemon and a little black pepper
This air-dried beef is sliced and interleaved ready for you to serve. Try serving with our smoked meats (like the award winning smoked venison and smoked mutton) for a fabulous charcuterie platter

David has smoked meat for many years for domestic consumption but earned his living as a professional salesman in a variety of companies including adhesives, lithium batteries and nanotechnology. He was made redundant and ended up spending 18 months on a building site (becoming known as ‘Posh Dave’) driving dump-trucks and digging holes before he and his wife Karen started Capreolus Fine Foods in early 2009 in the kitchen of their house in Gillingham, Dorset.
It was soon clear that the business had real potential and a friend offered them the use of a converted calving shed to take it past the kitchen table stage. Over the next few months David and Karen perfected their cold-smoked venison and increased their product range to include smoked beef, chicken, duck and pheasant; dry-cured bacon and a delicious ham. They picked up several customers including well known restaurants and delicatessens and the business out-grew the calving shed. They have now set up the smokehouse on a permanent footing at Uphall Farm in Rampisham near Dorchester.
Our product range includes: cold-smoked wild venison, beef, mutton and rose veal, smoked duck, chicken, partridge and pheasant, dry-cured bacon, pancetta, lardo, guanciale, cooked hams, confit of duck and pork, smoked ham hocks, rabbits, air dried beef, veal and venison and rare breed suckling pig and other assorted delights.
Capreolus Fine Foods derives its name from the Roe deer whose Latin name is Capreolus capreolus.
